Buttermilk Oat Irish Soda Bread

Instant Irish soda bread, just add water, mix, and bake!

You will need:
  1. Preheat oven.
  2. Line bread pan with parchment paper, folding and conforming the paper into the pan. You can also forego the paper in favor of liberally greasing the pan with shortening or margarine.
  3. Put mix in a large mixing bowl and aerate bread mixture with a whisk for about 10 seconds. This helps the flour absorb the water more evenly, which may settle during shipping.
  4. Stop and make sure your oven is hot and your parchment-lined pan is ready. The dough will begin to rise as soon as it gets wet, and needs to be put into the oven immediately after being mixed in order to rise properly.

  5. Add water to mixture in bowl. Mix and fold with a spatula or large spoon until all the water is incorporated. It should only take about 20-30 seconds. You should get a somewhat lumpy, gooey batter. It is okay to mix for longer, but it will result in a chewier, less fluffy bread.
  6. Immediately transfer into the lined baking tin, and smooth out using a spatula.
  7. Make a deep score, roughly a half inch deep, along the middle of the loaf. This will help create a better, more even rise.
  8. Immediately place into the preheated oven on the middle rack and bake for 70 minutes.
  9. Remove bread from the pan and carefully peel away the parchment paper. Let it cool for at least 20 minutes before cutting.
